Ingredients:

Mochi Dough
100 g glutinous rice flour
30 g cornstarch
20 g powdered sugar
180 g milk
20 g unsalted butter

Mochi Filling - Dragon Fruit Fluid Gel
360 g dragon fruit
30 g sugar
Juice from ½ lemon
7 g agar-agar powder

Whipping cream
Alamii Honey Gummy

Cooking Instructions:

  1. Combine 100 g glutinous rice flour, 30 g cornstarch, 20 g powdered sugar, and 180g milk in a bowl.
  2. Mix until smooth, then steam for 20 minutes.
  3. Once cooked, add 20 g unsalted butter to the dough and knead until smooth and elastic.
  4. Combine all ingredients for the dragon fruit fluid gel and blend until smooth.
  5. Cook over low heat while stirring continuously until it comes to a boil.
  6. Pour into a container and let it cool until set.
  7. Once firm, blend the dragon fruit agar mixture until it becomes a smooth gel.
  8. Cut the Alamii Honey Gummy into small pieces and coat them with toasted cornstarch.
  9. Whisk the whipping cream until fluffy, then transfer it to a piping bag.
  10. Divide the mochi dough into portions and dust with toasted cornstarch to prevent sticking.
  11. Fill each mochi with whipped cream, dragon fruit fluid gel, and pieces of Alamii
  12. Honey Gummy, then seal and shape into balls.
  13. Plate the mochi and decorate the top as desired.
